Dogmatikos Vaeni Wines

Where does it come from?

Special vinification technique where grapes from the noble red variety Xinomavro are used, which are carefully crushed, without pressure, so that we collect only the first juice (preparation) which is then led to a very slow alcoholic fermentation, in stainless tanks and at a very low temperature (8°C).

Seductive wine, with shades of yellow grape, characterized by a full body, rich aroma of green apples, pears and tropical fruits. Unruly but balanced with a particularly aromatic character, soft taste and long aftertaste.

The variety...

Xinomavro (ksee-NOH-mah-vroh), is a red-wine grape originating in Greece, more particularly in north-western part of Greece, in the Emathia region of Macedonia, the monovarietal appellations is from Naousa and Amynteo. Xinomavro is generally considered one of world-class red-wine grapes (those in boldface in the varietals list to the left of the page).

Discover the unique character of the grape by choosing one of Cinque’s wine tastings or enjoy it by the glass at wine bars in Athens.

The winery...

The VAENI Naoussa Co-op is one of the most highly progressive wine-producing units in Greece. Apart from the premises, the co-operative owns a current acreage of 2,3 hectares (23 stremmata), 2 of which are planted with the Merlot variety and the rest 0,3 ha with the Xinomavro variety. Planting density is 3.300 plants per hectare. The vines are linear, developed at double lanyard and allow of short pruning. The rootstock onto which Xinomavro has been grafted is the 110R whereas the 1103P has been used for the Merlot.
