Within this dramatic landscape, Assyrtiko grows and thrives, producing wines defined by intense minerality, sharp citrus character and electrifying acidity.<\/p><p data-start=\"702\" data-end=\"929\">It was within this context that Cinque Wine &amp; Deli in Psyrri hosted a special #WineLover Seminar dedicated to exploring the diversity of Santorini\u2019s vineyard through the limited edition collection \u201c7 Villages\u201d by Paris Sigalas.<\/p><h2 data-start=\"931\" data-end=\"975\">7 Villages: An Ode to Santorini\u2019s Terroir<\/h2><p data-start=\"977\" data-end=\"1188\">The project \u201c7 Villages\u201d was conceived by renowned Santorini winemaker Paris Sigalas with a bold objective: to showcase how terroir differences within the same island can shape distinct expressions of Assyrtiko.<\/p><p data-start=\"1190\" data-end=\"1473\">For this limited edition collection, Assyrtiko grapes were vinified separately from seven different villages of Santorini\u2019s PDO zone. Each wine matured for approximately twelve months on its lees, maximizing aromatic depth and structural complexity before being bottled individually.<\/p><p data-start=\"1475\" data-end=\"1632\">The result was a rare and educational wine experience \u2014 seven wines, same vintage, same grape variety, same winemaker, yet remarkably different in character.<\/p><h2 data-start=\"1634\" data-end=\"1673\">Assyrtiko: A Global Greek Ambassador<\/h2><p data-start=\"1675\" data-end=\"1931\">Assyrtiko has evolved from a local island variety into one of Greece\u2019s most internationally recognized white grapes. It has gained increasing global attention, appearing on prestigious wine lists worldwide and earning continuous international distinctions.<\/p><p data-start=\"1933\" data-end=\"2112\">The variety\u2019s adaptability, combined with Santorini\u2019s volcanic soils, produces wines that express stone, citrus, salinity and tension \u2014 elements that define the island\u2019s identity.<\/p><p data-start=\"2114\" data-end=\"2369\">The \u201c7 Villages\u201d collection aimed to demonstrate that even within the relatively small vineyard area of approximately 7,000 hectares, micro-differences in altitude, sun exposure and harvest timing can significantly influence the final result in the glass.<\/p><h2 data-start=\"2371\" data-end=\"2405\">A Seminar at Cinque Wine &amp; Deli<\/h2><p data-start=\"2407\" data-end=\"2554\">Rather than tasting the wines alone, the collection was opened during a dedicated #WineLover Seminar at Cinque Wine &amp; Deli, Agatharchou 15, Psyrri.<\/p><p data-start=\"2556\" data-end=\"2728\">Graduates of the #WineLover seminar gathered to share impressions, compare notes and discuss the subtle \u2014 and sometimes striking \u2014 distinctions among the seven expressions.<\/p><p data-start=\"2730\" data-end=\"2783\">What began as curiosity quickly turned into surprise.<\/p><p data-start=\"2785\" data-end=\"2993\">The expectation that differences would be minimal proved incorrect. The wines revealed nuanced variations in structure, aromatic profile and mouthfeel, highlighting the precision of terroir-driven winemaking.<\/p><p data-start=\"2995\" data-end=\"3219\">Cinque Wine &amp; Deli provided the ideal setting for such a focused tasting \u2014 intimate, educational and centered on dialogue. The owners generously hosted both the tasting and the lively wine-loving company that accompanied it.<\/p><h2 data-start=\"3221\" data-end=\"3264\">Understanding Terroir Through Experience<\/h2><p data-start=\"3266\" data-end=\"3402\">The seminar reinforced an essential truth: terroir is not theory.
