Before the sandwich,
there was the kolatsio.
In the old Greek grocer’s shop, bread met cheese, cured meats, jars, pickles, tomato paste, herbs and olive oil. Wrapped in paper, those simple ingredients became the everyday Greek kolatsio — something to take to school, to work, to the field, or to share.

ESTORA begins with the bread. Its idea was born from the breads we once made in the traditional oven at Casa Cinque. Today it is made for us by a trusted partner and always baked on stone.
Then comes the world of the old Greek grocer: cheeses and cured meats, pickles and jars, tomato paste, vegetables, herbs, nuts and extra virgin olive oil.
The old kolatsio was simple: good bread, something tasty inside, a little olive oil, and a meal you could carry with you. ESTORA continues that philosophy for today.
We do not recreate the kolatsio of the past. We carry its spirit forward with Greek-produced ingredients, contemporary combinations and the hospitality of Cinque.
Every ESTORA is filled to order, finished with herbs and Greek extra virgin olive oil, and served with a little more EVOO on the side for dipping.
It is not a copy of an old sandwich.

Where the story began.

A small corner of the old Greek grocer.
The ESTORA story extends beyond the bread. A small curated shelf brings back familiar products from the old Greek bakalis: tomato paste, pickles, olives, anchovies, honey, spoon sweets, halva, loukoumi and dark chocolate. Not as decoration, but as a living part of the story — some enter our recipes, some may become a small plate, and some simply carry a memory.

Then came ESTORA.
The idea began with the breads we made in the traditional oven at Casa Cinque, close to Lamia. That memory became the starting point for ESTORA. Today our bread is prepared for us by a trusted partner and always baked on stone — carrying the same belief that good food begins with bread and becomes meaningful when it is shared.
