Cinque did not begin as a finished formula. Its founders built the experience through service, conversation and the lessons of each working day. Listening to guests and refining what happened at the table became part of how the wine bar grew.
Learning through hospitality
Before expansion or recognition, there was everyday practice: choosing wines, presenting them clearly, pairing them with food and welcoming people with care. Some ideas worked immediately. Others needed adjustment. Each encounter helped the team understand what visitors valued.
This is why learning remains part of the Cinque story. A wine list and a room matter, but the way people use them together creates the experience.
From practice to a shared approach
As Cinque developed, those lessons informed training and the way the concept is explained to partners. A new team needs room to ask questions, understand the reasons behind a service choice and learn through doing.
The aim is consistency in the essentials: knowledge of Greek wine, thoughtful pairings and a personal welcome. Each location also listens to the people who visit it and responds to its surroundings.
The founders’ perspective
For Grigoris and Evangelia, hospitality grows through presence. They see what works by meeting guests, hearing their questions and sharing a glass at the right pace. That daily contact continues to shape the Founders’ Edition in Psyrri.
Returning to the beginning helps us make choices about what comes next. We keep the curiosity that helped build Cinque and use what we have learned to give visitors new reasons to come together.
The journey continues
There is always another Greek wine to discover and another conversation to begin. Cinque continues to learn from its guests, its team and its partners. The work happens one experience at a time, around the table.
